I'm obsessed with fresh fruits and veggies. I love gardens, produce stands, random trucks on the side of the road, and especially tailgate markets. I love living in a place where eating fresh and healthy is a priority. We have several weekly tailgate markets around town and I'm doing my best to get to each one.
I'm starting a little summer series that will be posted each Wednesday. Each week I'm taking my market tote, camera, and some cash to one of the local tailgate markets to scoop up something healthy and fresh. Then, I'm going to share the recipe to whatever I make using my fresh fruits or veggies!
This week I purchased some juicy peaches. Trust me. There is nothing better than a warm, fresh summer peach. Today I'm going to share a quick and delicious recipe for peach muffins. These were a big hit at our house! So today I'm going to share the most delicious peach muffin recipe with you.
You'll need...
2 cups of all purpose flour
3/4 teaspoon of baking powder
1 teaspoon baking soda
1 teaspoon of fine sea salt
1/2 teaspoon of cinnamon
3/4 cup of sugar
1 cup of milk
1 egg
3/4 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
About 2 1/2 peeled, cubed peaches!
Preheat the oven to 350 degrees and spray your muffin pan so that they don't stick.
In a large bowl whisk the flour, baking soda, baking powder, salt cinnamon, and sugar.
In a separate bowl, whisk the milk, egg, almond extract, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix. Gently fold in the peaches.
Scoop the batter into your muffin pan and bake for about 25 minutes. And yum. Bursting with peachy goodness!
